Minestrone Soup

2 tbsp. oil
2 lb. stew meat
1 c. chopped celery
3/4 c. chopped onion
2 tbsp. parsley
1 clove garlic
6 c. water
2 (8 oz.) cans tomato sauce
1 tbsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1 c. broken spaghetti
1 1/2 c. sliced zucchini
1 pkg. frozen peas
Parmesan cheese


In large soup pan, brown meat in hot oil. Push meat to side and put onion, celery, parsley and garlic into fat. Cook until tender. Add water, tomato sauce, salt, pepper and oregano. Stir and bring to boil. Reduce heat and cook until meat is tender (about 2 hours). Mix in spaghetti, zucchini, frozen peas and cook until done (about 15 minutes). Sprinkle Parmesan cheese on top as desired.
