Oriental Spinach Soup

1 (10 oz.) pkg. frozen chopped spinach
1 tbsp. cornstarch
1 1/2 c. water, divided
2 (10 1/2 oz.) cans chicken broth, undiluted
1/2 c. sliced celery
2 tsp. soy sauce
2 tbsp. sliced green onions

Cook spinach as per package, omitting salt, drain well. Dissolve cornstarch in 1/4 cup water, add to remaining water. Combine cornstarch mixture and broth in a saucepan. Add spinach and remaining ingredients, bring to a boil. Reduce heat and simmer 5 minutes. Yield: 8 servings (1 1/3 cups).
