Palak Shorba (Spinach Soup)

2 cups chopped spinach
1 onion -- chopped
2 cups skim milk
salt and pepper -- to taste
2 tablespoons cottage cheese -- (paneer)


Cook the spinach and onion in 1/2 cup of water until soft.

Add the milk and blend in a mixer. Strain.

Add salt and pepper.

Serve hot, topped with grated cottage cheese.
