1 c. chopped carrots
1 c. chopped celery
1/2 c. chopped onion
8 c. water
1 lb. dried peas, washed and cleaned
1 tsp. thyme
1/4-1/2 tsp. pepper (to taste)
2 tbsp. dried parsley (1/4 c. fresh)
Saute carrots, celery, onion in a small amount of oil. Add water, peas, thyme and pepper - bring to a boil and simmer, covered, 1 hour. Add parsley and simmer 30 minutes.
