Pea Soup

1 lb. pkg. split peas
Ham bone, ham hocks, or metworst
1 lg. onion
2 carrots, shredded
2 lg. potatoes (whole)
2 qts. water or more


Simmer peas with ham bone 2 to 3 hours. Remove ham bone and return ham to pot when adding vegetables. Add vegetables and cook 1 to 2 hours more. More carrots and potatoes may be added, if desired. Remove whole potatoes and mash (not whip). Return to soup. Add seasoning as needed to taste.
