Peach Soup

2 c. canned peaches
2 tbsp. fresh lemon juice
1 tbsp. sugar
2 c. white wine
1 sm. bay leaf
1 whole clove
1 sm. piece of cinnamon stick
Pinch of salt

Process peaches in a blender until pureed. Pour into a large bowl, add lemon juice and sugar and mix well; set aside. Bring wine, spices and salt to a boil. Reduce heat and simmer for 5 minutes. Strain, discarding spices and let mixture cool. When cold, add to puree. Cover and refrigerate until chilled. Makes 4 servings. Hint: The spices in a small cheesecloth for easy removal after cooking.
