1 tbsp. butter
1/4 c. celery, thinly sliced
1/4 med. onion, minced
1/2 tbsp. flour
2 c. chicken broth
1/4 c. peanut butter, plain or chunky
1/4 c. milk or cream
Salt & pepper to taste
Saute celery and onion in butter; add flour and stir. Add broth; bring to a boil, stirring. Add peanut butter; simmer 15 minutes. Add milk or cream; season with salt and pepper. FOR CREAM OF PEANUT SOUP: Saute celery and onion in butter, put everything but milk in blender; blend; heat; add milk and seasonings.
NOTE: This tastes like green pea soup, but is richer and more delicate.
