2 5 oz cans chunk white chicken
1 14.5 oz can tomatoes
1/8 teaspoon ground red pepper
1/2 teaspoon gumbo file seasoning
1/4 cup instant minced onions
1 cup chicken broth
1 cup uncooked white rice
Combine all ingredients except the rice in a large heavy skillet. Bring to a boil; cover and simmer for 10 minutes. Stir in rice. Replace cover and simmer for 20 minutes or until rice is tender. Adjust seasonings if necessary. Stir in file just before serving.
