1 lb. cauliflower, chop, peel & use stems also
1 lb. broccoli, chop, peel & use stems also
1 med. onion, chopped
1 lb. mixed frozen vegetables (carrots, peas, etc.)
2 cans chicken broth or 2 1/2 c. homemade broth
1 can mushroom soup
1 can celery soup
1 c. milk
1/2 lb. Velveeta cheese
2 c. ham, finely cubed
Combine all ingredients and simmer, adding cheese last. *If you prefer thicker soup, add instant potato flakes.
