Turkey Soup

5 qts. water
1 turkey carcass
1 c. chopped celery
1/2 c. chopped celery leaves
1 c. chopped onion
1/2 c. chopped parsley
7 chicken bouillon cubes
1/4 tsp. ground black pepper
1 bay leaf
1 c. peas
1 c. sliced carrots
1 c. cut green beans
8 oz. fine egg noodles
1/4 c. butter
1/4 c. all-purpose flour
Mushrooms (optional)


Place all ingredients up to bay leaf in large pot, bring to boil. Lower heat, cover and simmer 1 hour. Remove carcass and let cool. Add veggies to soup, bring to boil, then simmer for 10 minutes until tender. Remove meat from carcass and put in soup. Bring to boil and add noodles. Cook uncovered 10 minutes while you melt butter in small pan. Stir in flour, cooking slowly until brown. Stir into soup and bring to boil to thicken. Lower heat and simmer 5 minutes.
