Zesty Zucchini Soup

3 c. water
5 chicken flavor bouillon cubes
6 zucchini, sliced
2 carrots, scraped and sliced
1 sm. yellow onion, sliced
1 (3-4 oz.) pkg. cream cheese, cubed and softened
Salt and pepper to taste
Hot sauce if desired


In large pot, bring water to boil, add bouillon cubes and stir until dissolved. Add vegetables and reduce heat. Simmer 20 minutes or until tender. Blend in food processor or blender until it's smooth. Add in cream cheese and blend well. Return to pot, add salt, pepper and hot sauce to taste. Keep in mind this will be fairly salty due to the bouillon. Cook on low heat until thoroughly heated. Serve hot or cold.
