Zucchini Soup

4 c. zucchini, diced
1/2 c. water
2 tsp. chicken bouillon
1 c. onion, chopped
3/4 stick butter
1 tbsp. flour
Salt and pepper
2 c. milk
Parmesan cheese, if desired


Combine zucchini, water and chicken bouillon. Bring to a boil for about 15 minutes, then blend in blender. Melt butter and saute onion. Add flour, salt and pepper if desired. Combine all with milk and simmer for 10 minutes. You may top with Parmesan cheese, if desired.
