1. Peel potatoes and carrots, and cut in not very small pieces (some people do not cut them). Clean and cut up the leeks.
2. Boil in not too much water, so that at the end you don't have much left (and do not throw it away!)
3. Let it cool (in the fridge if you want).
4. Serve in a traditional spanish fashion with salt, oil and either lemon juice or vinegar.
Difficulty : very easy.
Precision : no need to measure.
