Broccoli Cheese Soup

1 (10 oz.) pkg. frozen broccoli
2 tbsp. chopped onion
1 c. chicken broth
3 tbsp. melted butter
1 c. Velveeta, chopped sm.
3 tbsp. flour
2 c. milk
1/2 tsp. salt
1/4 tsp. pepper


Cook broccoli with onion in broth in small saucepan until tender. Do not drain. Blend butter and flour in 2 quart saucepan. Stir in milk. Cook until thickened, stirring constantly. Season with salt and pepper. Add cheese. Heat until cheese melts. Add vegetable mixture and broth. Simmer for 10 to 15 minutes. Yield: 6 to 8 servings.
