Cheesy Crabmeat Soup
1/2 c Thinly-sliced celery
1/2 c Thinly-sliced carrot
2 tb Chopped onion
1 tb Water
10 3/4 oz Can condensed creamy natural potato soup
3 c Milk
6 1/2 oz Can crabmeat, rinsed and drained
1 c Shredded cheddar cheese
1 To 2 tb dry white wine
Combine celery, carrot, onion and water in a 2 qt glass mix & pour bowl. Cover with casserole lid. Microwave (High) for 4 to 5 minutes or until vegetables are tender. Stir in soup, milk, crab, cheese and wine. Microwave (High), uncovered, for 6 to 7 minutes or until heated through, stirring once. Garnish with chopped parsley.
Tips: Canned shrimp or clams can be substituted for crabmeat. When substituting clams, use liquid for part of milk and do not rinse clams.
